A hot pink ancestral method from Assisi, Umbria, the very heart of Italy.
The enticing aroma of summer cherry and the elegant note of rose petals will have you wondering why don’t we drink more pet nat all year round. On the palate is fresh, sapid, balanced and fine.
Serve properly chilled, at 5-6C
Hows it's made
The manually harvested grapes are delicately destemmed and softly pressed.
Part of the must is frozen, while the rest of the mass is cold fermented at 16/18° C.
The still wine is matured in steel tanks for 7 months, before being bottled manually.
The second fermentation is kick started with the addition of the frozen must, as an inoculum of sugars and yeasts.
