More About This Wine
The golden yellow colour comes from the maceration on the skin, though this still belongs to the white, rather than orange category.
The nose is very fragrant, reminiscent of ripe pear, apple fritters, cinnamon and yellow flowers.
On the palate is fresh, savory, full-bodied and balanced ,with a slightly toasted finish.
Serve at 10/12 C.
Hows it's made
Costanza’s sauvignon blanc vines are planted at 300 m of altitude on clay-sand soil near San Gregorio, in the ancient municipality of Assisi.
The harvest is made manually, the grapes are delicately destemmed, then soft pressed. The fermentation happens at 25°/28°C in stainless steel. The wine is then left to mature for 9 months and in untoasted French barrels for 5 months before being bottled.
