Ribolla Gialla

Ronco Severo

£36.00

This absolute humdinger of a wine has got it all going on: both floral and citrus on the nose, leading into a rounded mineralarity with hits of acidity, tannins on the side and a nod to spice in the finish. Needs to be tried to be believed.

More About This Wine

Deep yellow in the glass, with golden highlights. The bouquet is intense with beautiful floral scents coupled with notes of dried and citrus fruits. The slight mineral edge becomes more pronounced as the wine ages. Spiky acidity is typical of Ribolla Gialla, sapid with a slight tannic side and a spicy after-taste.

Hows it's made

Fermentation on the skins in 10hl truncated cone-shaped oak vats. After that the cap of grape skins is frequently punched down without temperature control. Only indigenous yeasts are used. After soft pressing the wine remains on its lees for 11 months in 30hl Slovenian oak barrels. The wine then stays in the same vessels for 12 months. It is bottled without filtration or clarification.
