More About This Wine
Straw yellow with greenish highlights. Presents typical light deposits of yeast in the bottom of the bottle. Starts with hints of crisp green apple and green nectarine, and continues with elegant floral notes and an intense aroma of acacia flower. Balanced and elegant, to drink throughout the meal. An excellent companion to fish and poultry courses. It is customary to gently turn the bottle over a few times before opening, as you would do with a craft beer, so the lees become incorporated.
Hows it's made
Made from 100% Glera grape. Harvest happens in the first ten days of September. The grapes are harvested by hand and collected in crates. After a a short maceration on the skin, the wine is fermented at a temperature of 17°C using indigenous yeasts then stored in thermo-controlled stainless steel tanks at a temperature of 10°C .
The second fermentation is made according to the Martinotti/Charmat method, using an autoclave system with re-fermentation at 15°C for a duration of 60 days.
