More About This Wine
Slightly darker in colour for these grape varieties than you would normally expect. Beautiful notes of red fruits on the nose, with peppery hints . On the mouth it is light and chiseled, yet ripe. The finish offers light tannins of great finesse, and more spices. This will go perfectly with grilled meats, red meats, game birds, as well as aged cheeses.
Hows it's made
The wine is made from grapes grown on vines that are 40 years old on a west-facing slope where the rocks are a precious mixture of red, grey and brown marl.
Manual harvest, 100% de-stemmed. Fourteen days of vatting, without aggressive pumping over, just gentle stirring of the cap. Fermentation temperature is maintained at 18°C to conserve the fruitiness. Wine made from grapes grown organically using natural composting techniques and special preparations of herbal sprays while following the astronomical calendar.
