More About This Wine

Porcellese is the name of a very specific terroir in Patrimonio, the result of an ancient alluvial plateau with rolled pebbles similar to the ‘galettes’ you would find in the Rhone valley. This plot has been planted in 1966 exclusively with the Nielluccio grape. The yields are very low here and the wines show extraordinary concentration.

Hows it's made

Manual harvest. De-stemming and vatting for 48 hours for a pre-fermentation cold maceration. Vatting for a maximum of 1 month, with a natural start to fermentation. Light daily pumping over to water the cap. No extraction is carried out here, in order to obtain fine and digestible wines. Decanting is carried out in 500 litre boxes, so as to avoid the use of a pump. Natural winemaking, with sulphite content below the limit for natural wines.
