More About This Wine

Golden yellow colour, with intense amber reflections. Complex and intense bouquet with nuances of wisteria and acacia honey. Dried fruits on the palate, as well as toasted almonds and hay. Delightful in its own right at any time of the day. Pairs wonderfully with blue cheeses, liver patés as well as desserts that are not too sweet such as pannacotta, pot de crème, custard tarts and semifreddos.

Hows it's made

Careful manual harvests in boxes in early September, followed by natural drying in boxes for three to four months. De-stemming and maceration for about 48 hours followed by soft pressing and start of fermentation in steel tanks, at a controlled temperature for 25 days. Aged in stainless steel tanks on its fine lees, where it is subjected to constant batonnage for about eight months.
