More About This Wine

The nose bursts with crunchy apple and pear, citrus and the soft biscuity aroma from the lees ageing. The palate is slender, delicate and precise, with wet stone, lemon, green apple acidity and subtle notes of white peach and hay. This pure-fruited wine sings with minerality through the very morish saline finish. Shuck a few oysters with this wine and you are in for a great aperó.

Hows it's made

The grapes are gently pressed, then fermentation happens in thermo-regulated steel tanks between 18-20ºC. The wine is matured on its lees for six months before bottling. Less than 50mg/L of total SO2 is present.
