More About This Wine

A rare and exceptional wine from a unique, wild plot. A “blanc de noir” made with Grenache Noir cultivated naturally high up in the mountains. Its nose is a triumph of white fruits, with a ripe, aroma leading towards wet stones and yeasty, bready notes. On the palate it is the freshness that strikes you. Its linear, clean mouthwatering acidity through the notes of citrus and again, pear. A biscuity, yeasty character gives great structure to this wine. For the lovers of unicorns.

Hows it's made

The harvest is manual and the grapes are carefully sorted. The grapes are pressed in whole bunches, the must is then settled. Vinification is done in
thermo-regulated stainless steel vats. After the malolactic fermentation the wine is kept for seven months on its fine lees, with regular batonage. Unfiltered and without any added sulphites.
