More About This Wine
Light red in colour, with ruby sparks.The nose is warm and fruity, with exuberant notes of blackberry and blueberry as well as dried rose petals and spices. Full bodied, chewy and rich, with dusty tannins and juicy yet elegant finish. Just like the Barolo this is ready to drink but will develop interesting tertiary notes with the magic of time. Ideal with risotto and polenta and ragu, duck magret, pork belly, but also leaner meats like rabbit.
Hows it's made
After soft crushing and de-stemming, the pressed juice goes though 2 days of pre-fermentative maceration at 5°C and déléstage. Fermentation and maceration on the skins for approx. 7/8 days at a controlled temperature of 26°C with soft pressing of the marks.The must is then pumped over at least twice a day to improve the extraction of the colour, tannins and varietal aromas until the fifth day, then once a day. The malolactic fermentation is completed right after the alcoholic.
