More About This Wine
Deep yellow in colour, with gold and orange highlights. The nose is fragrant and delicate, gently aromatic, with crisp apple, mountain flowers and honey scents as well as mint and toasted pinenuts. The same notes are reflected in the palate, which is savoury and persistent. Despite its complexity this wine remains fresh thanks to its mouthwatering acidity. Wonderful with a bowl of steamed mussels or fresh raw oysters.
Hows it's made
After crushing and de-stemming, the pressed fruits go through pre- fermentative maceration for 12 hours at 5°C. Skin maceration for approx. 12 days at a controlled temperature (15°C) until the end of alcoholic fermentation. Racking is made through a hand-operated wine-press. The wine is matured in stainless steel with weekly batonnage, then 1 year in bottle before being released.
