More About This Wine

Citrus notes are wonderfully interlaced with white blossom, fresh almonds and spices on the nose. These are reflected on the palate. Here the ageing in a semi-oxidative environment produces great textural complexity along with aromas of spice and nuts.

Hows it's made

Manual harvest. The grapes are harvested and pressed, alcoholic fermentation is left to happen naturally in stainless steel tanks. The two grapes, Chardonnay and Savagnin are vinified very similarly though separately. Each wine is put in 228L tonneaux and kept under the traditional “voile” of dead yeasts. This traditional method of ageing whites, not dissimilar to the one used in Jerez to make sherry, gives Jura white its distinctive nuttiness and minerality. The Chardonnay stays “sous voile’”for three years, the Savagnin five years, before being blended in the “Cuvée Georges” and filtered. The wine is bottled with a minimum of sulfur.
