More About This Wine

Garnet, with purplish reflections. The nose is rather restrained, with notes of candied red fruits, garrigue and eucalyptus. You are immediately transported to the island now. The palate is slender, stretched by a very fine acidity. The mouthfeel is round, ample, velvety, with the same chalky/astringent touch as the white, and an elegant fruit, also disputed by the mineral. The finish, like its white sister, gains in concentration and intensity, with an even more marked chalkiness and pure, vibrant fruit.

Hows it's made

Vinification is natural, only SO2 is used in limited doses and displayed on the label. Whole bunch fermentation. Natural fermentation can take more than a month here. After extraction, the wine is aged for 12 months in a stainless steel vat on a fine lees. Bottling is done without filtration.
