Let’s start with a caveat for the lover of classic (read: boring) malbec. There is absolutely nothing jammy to be had here. This Cahor “Calcare” is packed with fresh raspberry, pomegranate and juicy blackberry fruit with a smooth and supple mouthfeel and remarkable minerality. Its structure is dense, but it is lifted by a spiky acidity towards the mid-palate. It ends with super silky tannins, softened from old wood ageing.
Hows it's made
The grapes are manually de-stemmed, the extraction happens by light punching down and daily pumping over. Macerated for 30 days at 28℃. The wine is then aged for 18 months in old 225L barrels before being bottled with no filtration.
