More About This Wine
This silken, vibrant cabernet franc has bright crunchy forest berries both on the nose and in the palate, layered with sweet spices and a fine grinding black pepper and shavings of liquorice. The old vines give impressive intensity and concentration to this number, which is an ideal companion to steak tartare, roast duck, calf liver, savoury tarts and egg dishes.
Hows it's made
Harvested by hand. Vinification in truncated wooden vats. Malolactic fermentation and ageing in oak barrels for 18-24 months in large natural oak casks (some 100+ years old), resulting in very little oak influence in the wines. The wines are never racked, fined, or filtered before they are bottled. The wines are all aged in a tuffeau cellar, the same freestone that was also used to build Les Châteaux de la Loire.
