More About This Wine
Pink-grapefruit coloured, cloudy, with gold highlights. The nose is delicate, with flowers and citrus fruits scents. On the mouth it is sapid and round, with a sour trace which intensifies its minerality. Tart strawberries, green nectarine and citrous come to mind. Refreshing and fun. A very versatile wine, ideal with aperitivo but also great during the whole meal, especially with delicate main dishes of fish, crustaceans and vegetables, fresh cheeses and delicate charcuterie.
Hows it's made
The Barbera grapes are de-stemmed and gently crushed. Maceration lasts 24 hours in the tank, followed by soft pressing of the must. Spontaneous fermentation lasts for approx. 10 days at a controlled temperature of 15°C. The wine is then matured in stainless steel tanks for 6 months at cold temperature.
Re-fermented in bottle and rested for at least 12 months ‘sur lie’, according to the ancestral method. Unfiltered and not disgorged.
