Anxious to give meaning to his profession as a winegrower and to preserve the dimensions of agronomic and environmental balance, Vincent naturally turned to biodynamic viticulture. His primary objective is to vinify high quality wines that are true to the terroir. The main principle of biodynamics is to prevent rather than cure. The main effort in Vincent’s vineyard is therefore aimed to the creation of a balanced and diversified environment for the vines to grow. He relies exclusively on herbal decoctions (nettle, horsetail, wicker, thyme, meadowsweet flower, etc.) to protect the vines from pests and diseases, the domain is certified organic and biodynamic (Demeter).

At the heart of the Côte de Bar, Vincent Couche tends 14ha of vines biodynamically over two very different types of terroir. In Montgueux, he has a south facing plot of Chardonnay vines on chalky soil. In Buxeuil he grows Pinot Noir (and other red grapes allowed by the appellation ) on kimmeridgian, clay, limestone and marl soil.
